La fermentación se realiza en depósitos cerrados de acero inoxidable buscando siempre preservar el vino del contacto con el oxígeno para mantener sus mejores notas naturales de aroma y color. 

Durante todo el proceso sólo utilizamos el mimo y el cuidado sin añadir ningún tipo de conservante o clarificante.
