De kleur van de wijn is diep robijnrood, neigend naar paars. Het heeft aroma's van rood fruit in jam, morello kersen, cacao en de schaal van walnoten. In de mond is hij vol, fluweelzacht en harmonieus van smaak. De druiven worden uitsluitend verbouwt in de provincie Taranto en delen van de provincie Brindisj. Het terroir
De primitivo druif is een oude druivensoort die door de Feniciërs en de Grieken overal rondom de Middellandse Zee werd geïntroduceerd. De kleur van de wijn is diep robijnrood, neigend naar paars. Het heeft aroma's van rood fruit in jam, morello-kersen, cacao en de schaal van walnoten. In de mond is hij vol, fluweelzacht en harmonieus van smaak.
De druiven worden uitsluitend verbouwt in de provincie Taranto en delen van de provincie Brindisj. Het terroir bestaat uit kalkhoudende klei. De winters zijn hier matig en de lentes en zomers erg droog. De druiven worden strikt met de hand geoogst wanneer zij rijp zijn, de trossen worden zorgvuldig geselecteerd en onderworpen aan een traditionele maceratie van 10-12 dagen op de schil, waarbij de most wordt gefermenteerd bij een gecontroleerde temperatuur. Alcoholische gisting wordt gevolgd door malolactische gisting. De wijn wordt ongeveer 6 tot 8 maanden gerijpt in Franse eikenhouten barriques. Daarna rijpt de wijn nog 2 tot 3 maanden door op fles.
